The slightly grey color comes from the clay lined salt ponds where the salt is collected by hand, and as the salt has not been heat treated or bleached it retains its original colour. What's the difference between these salt crystals and the unrefined light grey damp crystals? The finer ground crystals are less damp and a much smaller size and therefore they are suitable for finishing salt purposes as well as for cooking. These crystals have been allowed to dry for longer before being stone ground. Suitable for use in a mortar and pestle or in a salt shaker.
